Spring Onion
How to choose spring onions for carving.
| 1. Cut the leaves of the spring onion, lengthwise, into three. |

| 2. Put a cut leaf segment between the barrel of the knife and a finger and slide along the length of the leaf to start the leaf curling. |
|
| 3. Do this for all the cut leaf segments. |
|
| 4. Put the spring onion into very cold water and watch the leaves curl. |
|
| 5. A spring onion with fancy curls. |
